  • 4 large leeks, trimmed and sliced into 2cm rounds
  • 500ml whole milk
  • 40g unsalted butter
  • 40g plain flour
  • 100g mature Cheddar, grated
  • 1 tsp Dijon mustard
  • ½ tsp grated nutmeg
  • 60g fresh breadcrumbs
  • Salt and black pepper
